This scrumptious coconut bar recipe is from our collection of super easy recipes. It truly is a no fail bar recipe that looks and tastes sensational!

• 1 1/2 cups dessicated coconut • 1/4 cup rice bran oil • 1/4 cup sugar • 3 eggs, beaten • 1/4 cup self raising flour |
• Preheat the oven to 360F/180C • For the experienced cook, combine all the ingredients together till smooth. Bake for 10 minutes and slice when cool • If you're a beginner and concerned about what the mixture should look like, follow these few steps. Combine the sugar, coconut and oil • Add in the beaten eggs. Combine • Add in the flour. Combine • Pour the mixture into two non-stick loaf "tins". The batter will be quite shallow in the "tins" as you're making bars and not a cake • Bake for 10 minutes and not a minute longer and you'll see that it's a lovely golden brown • Remove and cool on a wire rack • Slice into bars of your choice. Each loaf will produce 8 - 12 rectangular bars. But as you see in the picture, I've decided to make them diagonal - you don't get as many this way |
