Scrambled eggs - the secret here is take the pan off the heat as soon as the eggs cook and are firm, else they'll dry out and leave cooked eggs in a puddle of liquid. Poached Eggs - Into a skillet or frypan, pour water to about 1/2 inch depth. Add 1/2 teaspoon vinegar, a pinch of salt and bring to simmer. Break the egg into the water and cook the egg by allowing to simmer for 2 to 3 minutes. When set, lift out with a slotted spoon. This is a large shallow spoon with draining holes.
