There are so many variations to rice pudding but we love this particular version for this wonderful comforting pudding which comes from my husband's family.

Grandma's Rice Pudding

The secret to a good creamy pudding made from rice is that it is cooked slowly so that all the grains are soft and mushy and the texture is creamy. Grandma made this pudding in the days before Arborio rice was commercialized and she achieved this creamy texture by cooking rice slowly with creamy evaporated milk.

So, here is Grandma's recipe. My husband just loves this pudding the way his mother made it.

Grandma's Comforting Pudding Made From Uncooked Rice

This recipe serves 6 - 8 persons.

Serve topped with fresh fruit or with jam stirred through the luscious pudding.

Just Add Prepare
• 3/4 cup uncooked rice

• 1 can/ 12oz/ 375ml creamy evaporated milk

• 2 1/2 cups milk

• 1 cup sugar


• Place all the ingredients in a deep sauce pan

• Stir to combine then leave it.

• Bring to a gentle boil then turn the heat down to very low so that it simmers for about 2 hours

• Resist urges to stir the pot. Leave it to simmer quietly and for the milk to be absorbed into the rice grains

• You can serve this immediately as a hot pudding. In summer for a cold dessert, just pop the pot in the fridge for a couple of hours to cool

• Top attractively with fruit

My husband loves this pudding the way he ate it as a child - with raspberry jam stirred through his pudding. He says topping with fruit is too modern for his liking.

Now, how simple was that!

Tip

Take care not to boil the milky pudding, so watch it at the start so that it does not over-boil. Milk makes such a mess when it boils over.

Once it is on the lowest setting, you can leave it to the timer and get about your work, without having to worry about this milky pudding on the stove.
