There are so many variations to rice pudding but we love this particular version for this wonderful comforting pudding which comes from my husband's family.
Grandma's Comforting Pudding Recipe Made From Rice
The secret to a good creamy pudding made from rice is that it is cooked slowly so that all the grains are soft and mushy and the texture is creamy. Grandma made this pudding in the days before Arborio rice was commercialized and she achieved this creamy texture by cooking rice slowly with creamy evaporated milk. So, here is Grandma's recipe. My husband just loves this pudding the way his mother made it. Absolutely yummy! Grandma's Comforting Pudding Made From Uncooked Rice This recipe serves 6 - 8 persons. Serve topped with fresh fruit or with jam stirred through the luscious pudding.
My husband loves this pudding the way he ate it as a child - with raspberry jam stirred through his pudding. He says topping with fruit is too modern for his liking. Now, how simple was that!
Take care not to boil the milky pudding, so watch it at the start so that it does not over-boil. Milk makes such a mess when it boils over. Once it is on the lowest setting, you can leave it to the timer and get about your work, without having to worry about this milky pudding on the stove.
