Rice pudding recipes are pretty much reliably creamy and sweet and always yummy. Here is a nice variation made with delicious coconut milk and brown sugar. The coconut flavor makes this a special pudding.
Rice Pudding With Coconut Milk And Brown Sugar
Just Add | Prepare |
• 1 cup uncooked rice • 1 knob butter • 2 cans/14oz x 2/400gm x 2 light coconut milk • 2 cups milk • 2 cups water • 4 heaped tbsp brown sugar |
• Pop all ingredients in a sauce pan. Stir to combine • On moderate low heat, leave the rice to cook for 1 1/2 hours • Don't be tempted to stir. Just leave it to cook • So that the rice does not boil over, leave the saucepan lid opened slightly |
