This has to be the easiest of recipes with ground beef or mince as it's known in UK and Australia. Best of all, these are low fat meat balls. These easy meat balls are mixed together and popped in a hot pan to fry. This recipe makes 50 medium sized meat balls so that half can be frozen to be reheated for another meal.
Low Fat
1. Buy only premium grade ground beef. This meat will have less fat in it and there's less waste.
2. As you know, very few of my recipes use oil and it is the same with these easy ground beef meat balls. Use a non-stick electric fry pan so that there's no need for oil AND so you can cook 25 of the meat balls in one go.
Removing oil for cooking from your diet means you keep your slim hips for a little longer!
3. While other recipes call for sour cream, it is much better to replace it with low fat cream cheese and increase the amount of stock.
4. You won't have the bother of pouring off excess fat with this recipe with ground beef using these low fat instructions.

Easy Moist Meat Balls
Makes 50 medium sized meat balls.
Suitable for freezing.

Prepare |
• 2 lbs/1kg PREMIUM ground beef/mince beef
• 1 large onion, diced
• 1 stick of celery, diced
• 1 apple, diced
• 1 1/2 cups beef gravy, or beef stock, made to directions
• 10 oz/250 gm cream cheese
• 2 eggs beaten
• 1 apple, diced
• 1/2 cup breadcrumbs

• Put all the ingredients into a large pot and combine well
• Add salt, pepper and sugar to taste

Make Meat Balls |
• 1 1/2 cup breadcrumbs in a bowl
|
• Using your fingers, scoop about a large tablespoon quantity from the mixture and roll it in breadcrumbs
• Form a firm meat ball
• Pop it into your electric fry pan
• Flatten it a little with a spatula
• Brown on both sides

This makes 50 medium sized low fat meat balls, which is enough for 8 - 10 servings.

Tip
Always use PREMIUM grade ground beef or mince. There is no substitute for quality. It is best to use little to no oil in your cooking.
An electric fry pan will cook 25 medium sized meat balls.
Once cooled, store the surplus low fat meat balls in an airtight container and freeze.
