One Pot Mix To A Scrumptious Pound Cake
Melt the butter in a roomy saucepan, together with sugar. Take it off the heat immediately when the butter has melted.
Keep stirring the mixture off the heat, till the liquid fat combines with the sugar and it becomes a thick, creamy yellow mixture, all thick and smooth, just like this:
Then tip in all the ingredients.
Yes, put in all of the:
- flour
- bicarbonate of soda
- salt
- pumpkin
- beaten eggs
- cream
Combine well. The mixture will go from looking like a dry mess:

The tender stewed pumpkin will mostly break up into the batter and some parts will still keep their form. That's fine - don't mash up those pieces. They add character to the baked pound cake.
Pour the batter into the silicone baking mold.
Bake for 1 hour and 15 minutes. Insert a cake tester to check it is cooked through the middle. The skewer should come out clean. It there is still batter on the skewer, return the cake to the oven for further baking.
When it's removed from the oven, run a butter knife around the edge to remove the cake from the walls of the mold.
Allow to cool enough to handle and remove the cake from the mold and rest it on a wire rack to finish cooling.
To serve, pour lovely thick cream over a generous slice of pumpkin pound cake and garnish with colorful fruit such as kiwi fruit or strawberries.
