Final Easy Steps To The Pumpkin Pie Squares
For this stage, you'll require:
Step 1: Pastry
Before you do anything else, if you haven't yet already turned on the oven, please do so now to preheat the oven to 350F/180C.
Line the baking tray with baking paper so that it generously extends over all sides.
Lay the two sheets of puff pastry extending the sheets to the edges of the baking pan, like this.
Prick it all over with the tines of a fork.
Place it in the oven and bake for 15 minutes.
Step 2: Pumpkin
In the meantime, if you're using freshly cooked pumpkin, stew the pumpkin pieces in sugared water.
Drain thoroughly.
Then mash it. As there's so little of it, I just use a potato masher rather than a blender, and it takes no time at all.
You'll require 2 cups of mashed pumpkin.
When the pastry has cooled, spread the pumpkin over the pastry, leveling it evenly to the sides of the pan,like this.
Step 3: Layer crumble
Then, spread the prepared crumble over the pumpkin layer. This makes a generous thick layer of crumble.
Bake it for 50 minutes, till the top is crunchy and golden brown.
Now isn't this pumpkin pie with a crumble top just lovely!
And... so easy to prepare.
Before cutting into squares, allow the crumble pie to cool completely in the pan.
Then lift it off the pan holding onto the edges of the baking paper and plate it gently on a large square serving platter.
Slide off the paper without disturbing the crumble.
Cut the slab into squares or bars as you desire. This recipe makes 20 - 24 generous squares of pumpkin crumble pie.

Tips for Pumpkin Pie Squares
If you're using a non-stick bake-ware, don't be tempted to not use the greaseproof paper. Its role is not to prevent the pie sticking but to help keep the pie and generous topping in place when it is decanted onto a serving platter. Lifting it off the pan by lifting the paper keeps the pie and top in place.
Please be certain to drain off, all excess liquid from the stewed pumpkin. You want the cooked pumpkin soft but not slushy.
