No Yeast Pumpkin Bread Recipe
This delicious flavorsome pumpkin bread recipe is a huge
success at our home. It's another of our easy recipes that's devoured
within hours and I always need to make double the quantities and so that
there's some available to fill the lunch boxes.

No Yeast Pumpkin Bread Recipe
This recipe makes 1 loaf or 2 shallow loaves
Just Add
• 9 oz/300gm pumpkin or 1 1/2 cups mashed pumpkin
• 1/2 onion diced very finely
• Salt, pepper, a little cumin
• 3 oz/100gm butter
• 2 cups plain flour
• 2 cups shredded tasty or cheddar cheese
• 1 1/2 cups olives
• 1 egg beaten
• 1 cup milk
• Freshly ground pepper

Prepare • Preheat oven to 425F/200C
• Trim and de-seed the pumpkin. Cut into chunks
• Boil the pumpkin in salted water till soft
• In the meantime, start the bread mixture. Melt butter in a roomy saucepan. Take it off the heat as soon as the butter melts
• Add flour all at once, combine. It will clump together
• Add all the other ingredients.
• Add the mashed pumpkin. Combine well
• Spoon into a non stick loaf tin or if you want two shallow loaves, into two loaf tins
• Bake for 30 minutes

This pumpkin bread is delicious and the
combination of flavors of the tang of olives with the muted flavor of
pumpkin, makes this a popular snack at our home.
I love that this is a no yeast bread and so, there is no fuss
at all in making this delicious loaf. It really is a matter of throwing
all the ingredients into a saucepan and mixing it together prior to
baking.
Easy Recipes Tips
- Let the loaves sit and rest for 10 minutes after removing from the oven.
The melted cheese is extremely hot and it is best to leave it to cool a
little before eating
- Use non-stick bake ware or line with non-stick baking paper, so that the
pumpkin bread can be removed easily without sticking to the loaf tin
- I make two shallow loaves so that at least one survives to the next day for the kids lunch boxes
- For this recipe, a good substitute for butter is a high temperature oil such as rice bran oil.
