Perfect Pumpkin Pie

In this step of the tutorial, we learn how to handle the very fragile filo pastry. While this procedure is not difficult, it is a fussy process and and if you are after a perfect looking pie, take the time to handle this with care.

You've prepared and kept aside the delicious pumpkin filling cooked from fresh pumpkin and pan fried the marinaded chicken pieces.


Delicate Pastry For The Perfect Pumpkin Pie


Ingredients:

  • Equipment: Spring form pan, brush
  • 15 sheets of filo pastry
  • 1/2 cup of good quality vegetable oil

Step 1: Unroll very gently

To make this perfect looking pie, firstly prepare the fragile pastry.

Filo comes in a roll of extremely delicate sheets.

Be sure to work on a spacious, flat, clean surface where there is sufficient room. You will need to lay out flat one set about to be oiled and another set, oiled. Additionally, there needs to be room on your work surface for bowls of pie filling, oil and seasoning.


Step 2: Oil the pastry

Each sheet of filo pastry will need to be oiled on each side


The steps in this process for this pumpkin pie:

  • separate the sheets
  • oil each sheet
  • turn over the sheet and oil the other side too
  • drape the oiled sheets into the spring form baking tin.
Take care to gently prise apart the sheets of filo to minimize tearing as much as possible.

This is what filo looks like when unrolled. It is a stack of dry fine sheets of what looks like delicate linen.

Notice the little bowl of oil in the picture? Apply the oil lightly using a pastry brush.

Else, spray with cooking oil.


Turn each sheet over to oil


Brush each side lightly with oil making sure the edges are well oiled.

Turn the sheet over and repeat the oiling process.

Stack the oiled sheets neatly to one side.


Step 3: Drape

Drape each of the sheets over the spring form pan, taking care to overlap each sheet so that the edges evenly overhang the pan.

Use all 15 sheets in the roll of filo pastry.

Gently press down each sheet into the "well" of the baking pan so that the pan is evenly lined.

At the next stage, we'll place the filling and then wrap it all up for baking.
