• 4 oz/ 125 gm butter • 1 cup sugar • 4 eggs, beaten • 1/2 cup plain flour • 1 cup dessicated coconut • 1 cup cream • 3/4 cup milk • 1/4 cup lemon juice • 1 tbs lemon zest (recommended but optional) |
• Preheat oven to 360F/180C • Melt the butter and sugar in a large saucepan. Combine • Add all the other ingredients • Decant the batter into a non-stick baking pan • Bake for 30 minutes till golden brown |
