This comes in a 1 lb bag of specialized caster baking sugar which dissolves quickly. 

Superfine caster sugar is not powdered sugar which also termed as confectioners or icing sugar.  It's more granula although the grains are superfine.

You would use India Tree's superfine sugar when your cooking requires a fine delicate result such as if you're making a mousse, meringue, custards such as creme brulle' and delicate sponge cakes.  Use this fine sugar for specialized European recipes that call for a smooth texture.
