To cook sweet potatoes so as to retain their natural sweetness, the best way is to roast them.
- Preheat the oven at 400C/ 200F
- Peel the skin and discard
- rinse it clean then slice into chunks. Now I slice them to be no more than 1/2 inch thick as otherwise it takes to long to roast
- Toss them into a baking tray. There's no need to be precious except that it should not be overcrowded - the heat needs to evenly access and cook the sweet potato
- Pour a high temperature cooking oil like rice bran or sunflower oil over the sweet potato. Using tongs, toss them so that they're all evenly coated in the oil. The oil prevents them dehyrdating too much in in the oven
- Bake for 45 minutes, turning the sweet potatoes once to so that it's evenly cooked.

The hot air needs to get amongst the food so that the pieces are cooked evenly. You will find, if the pan is crowded, it actually takes longer to cook
