For a dinner for 4 to 6 persons, you'll need
- 3 pound/ 1.5 kg leg of lamb
- 1 tbs oil
- 1 heaped ts garlic granules
- 1 tb dried oregano
- 3 rosemary sprigs
- salt and pepper
Here's how to cook the roast leg of lamb
- Preheat the oven to 380F/180C
- Butterfly the leg of lamb by cutting two or three gussets in the thick part of the meat so that the lamb flattens out. You can leave in the bone if you wish, but cut along it so that the meat flanks around it
- Rub all the ingredients over the lamb
- Place in the center of a preheated oven and allow 20 minutes for one pound/500 grams. So for this 3 pound leg of lamb, it will take 60 minutes
- Allow to rest before carving
- Serve with gravy and roast potatoes and roast sweet potatoes.
