Our delicious easy tomato soup recipe is rich in fiber as it is thickened with peas and lentils and completely natural made from wholesome fresh ingredients.
Easy Tomato Soup Recipe
This recipe makes 10 generous servings.
You'll need:
- 1 onion, diced small
- 1 tbs oil
- 5 large ripe tomatoes
- 1 bunch parsley, chopped finely
- Either 2 cans of red kidney beans or 1 cup dry soup mix beans or lentils soaked in 3 cups of water, softened and ready to cook
- 1 1/2 cups white wine
- 3 cups chicken or vegetable stock
- 1 cup cream
- 1 cup milk
- 3 weetbix
Here's how to put together the soup from scratch and it is just too easy for words.
- If you're making soup from the dried lentils, be sure to soak them overnight so they're ready for the soup when you start to cook
- In your roomy soup pot, heat a tablespoon of good quality olive or rice bran oil. Toss in the diced onions and cook till softened.
- Toss in all the diced tomatoes and parsley and cook till softened.
- Pour in the white wine and stock bring to the boil then toss in the beans.
- Bring to the boil again then lower heat to simmer for about 30 minutes till the beans are softened
- Use a hand held blender and smoosh it all together
- Stir through the cream and milk taking care not to boil the soup.
- If the soup needs thickening, add in the crumbled weetbix. Bring to the boil while stirring.
- Serve hot, with a dollop of greek yoghurt and garnish with chives or spring onions

Tips From Easy Recipes
Be sure to soak the dried peas and lentils overnight for at least 8 hours so as to reduce the cooking time when cooked with the vegetables.
For an even healthier method, make your own chicken soup stock.
This recipe is most economical when there are surplus tomatoes in season or you've purchased too many and they're now over ripe.
