Easy Shrimp Scampi Recipe

• 1 lb/500 gm frozen uncooked shrimp or scampi • 2 cloves garlic, diced very finely • 1 large onion, diced finely • a little good quality olive oil • 2 bunches of thin asparagus, trimmed and cut into 3 inch lengths • 1 tspn piri-piri • 1 vegetable stock cube • freshly cooked spaghettini

• Into a hot pan, put a little oil and fry garlic and onions till golden • Toss in shrimp and asparagus. Cook quickly. The shrimp is cooked when it turns red in colour • Sprinkle the stock cube, combine well and add a little water if necessary • Season to your taste with salt, pepper, piri-piri and a little sugar • Toss in the just cooked spaghettini and combine well under moderate low heat. Add a touch of good quality olive oil if needed • Garnish with a sprinkling of chives |
This is an elegant meal, very easy to cook and ready within 15 minutes.
Now, how easy was that!
In my cooking I try to use very little oil, to preserve my hip size for as long as possible :), but this recipe really does need a little oil so that the cooked shrimp and asparagus is not too dry.
When you cook the pasta, cook as usual to al dente, where there's still a little crunch in the center. Take it off the stove immediately, drain the hot water off and refresh with cold water. That stops it cooking and becoming soggy.
The pasta will warm up when it is reheated together with the freshly cooked shrimp and scampi mixture.
Asparagus is perfect when it is still crunchy and bright green in color. So as not to over cook it, trim the bottom ends which are fibrous and use young, slender asparagus spears.
