It is an Onion and Tomato Bake with lots of crumbled Feta Cheese topped with tasty shredded cheddar.

Vegetarian Au Gratin

This makes one flan sufficient for 4 serves or 8 appetizer serves.

You'll need:

  • 2 onions, sliced thickly
  • 3 large tomatoes, sliced thickly
  • 2 spring onions, chopped
  • 2 tbs olive or rice bran oil
  • 1 tbs red wine vinegar
  • 1 tb dried oregano
  • 1 tb paprika
  • a good shake of pepper
  • 1/2 cup about 100 gm/3 oz Feta cheese, crumbled
  • 1 cup frozen peas
  • 1 1/4 cup shredded cheddar cheese

Here's how to put this vegetarian dish together:

Preheat the oven to 400F/200C.

Combine the oil, herbs and vinegar in the base of your flan pan/

Toss in the onions and tomatoes. Combine well so that the vegetables are thoroughly coated with the herbed oils.

Bake for 30 minutes. Turn the veg around a couple of times if you think it is looking dry.

Crumble the feta over the baked veg, add the frozen peas and top with shredded cheese.


Put it back in the oven at 440F/220C till the cheese has melted and the vegetarian meal is a lovely golden brown. This should take about 15 minutes.


This is such an easy vegetarian recipe, so healthy and an ideal recipe for diabetics!  My family loves this vegetarian recipe for the simple reason that it's so incredibly easy to make and the flavors are sensational.

This recipe is ideal to serve as an appetizer and for vegetarians, it's a wholesome meal cut into quarters and served with pasta. Don't you just love versatile recipes such as this?
