Vegetarian Au Gratin
It is an Onion and Tomato Bake with lots of crumbled Feta Cheese topped with tasty shredded cheddar.

This makes one flan sufficient for 4 serves or 8 appetizer serves.

Here's how to put this vegetarian dish together:
Preheat the oven to 400F/200C.
Combine the oil, herbs and vinegar in the base of your flan pan/
Toss in the onions and tomatoes. Combine well so that the vegetables are thoroughly coated with the herbed oils.
Bake for 30 minutes. Turn the veg around a couple of times if you think it is looking dry.
Crumble the feta over the baked veg, add the frozen peas and top with shredded cheese.
Put it back in the oven at 440F/220C till the cheese has melted and the vegetarian meal is a lovely golden brown. This should take about 15 minutes.
