Easy Pecan Pie Recipes

This has to be the simplest of easy pecan pie recipes. Using purchased short cut pastry sheets, all you have to do is make the pecan filling. As usual all our recipes are easy to make, as is this.

Easy Pecan Pie

This recipe makes 6 - 8 servings.

Just Add Prepare
• 2 sheets of purchased short cut pastry

• grease proof paper

• baking beans or dried beans


• Preheat oven to 400C/200F

• Line the baking tin with pastry - Using the base of the pie "tin" as a template, cut the round shape of the base of the baking "tin" and line the base with the cut pastry.

Then cut strips from the second sheet of pastry, line the vertical parts of the baking tray. If using a fluted pie tray, press the pastry into the fluted sides but try not to stretch the pastry

• Crumple baking paper into the pie and fill half way with beans

• Bake "Blind" for 10 minutes. This means bake the pastry shell without any filling in it.

Filling

• 1 oz/ 30 gm butter

• 1 cup golden syrup

• 2 eggs, beaten

• 4 1/2 oz/ 125gm pecan nuts


• In a saucepan on moderate heat, melt butter and golden syrup together. Combine well. It will become thick

• Take it off the heat as soon as the butter melts and continue to stir to combine it well

• Add beaten eggs into the mixture

• Stir in pecan nuts

• Remove baking paper and beans from pastry shell

• Pour filling into the pastry shell

• Bake for 40 minutes till the filling is firm

Tip

If you'd like more a more nutty pie, double the quantity of pecan nuts.

If you have vanilla in the pantry, add 1 teaspoon of vanilla to the filling mixture.
