For this recipe, you'll require:
• 1 can /16oz/450 gm pineapple pieces
• 2 bananas sliced
• 1 cup sugar
• 1 cup dessicated coconut
• 1/2 cup self raising flour
• 1/2 cup oil
• 1/2 cup pineapple juice
Here's how you put together this incredibly easy recipe:
• Preheat oven to 350F/180C
• Into a shallow and wide oven proof dish, place the bananas and drained pineapple pieces
• Mix together all the other ingredients in a separate bowl
• Spoon the mixture roughly on top of the fruit
• Bake for 30 minutes till golden brown
This crunchy topping of coconut is delicious with the tropical fruit combo of pineapple and bananas.
This cobbler can be made fancy for a dinner party by baking in individual ramekin
dishes. The golden topping looks inviting and is sensational garnished
with a little bit of fruit and whipped cream.
